A raw food diet includes a selection of raw fruits, vegetables, nuts, seeds, including sprouted whole grains and, in the case of non-vegans, eggs and fish (such as sashimi) and non-pasteurized/non-homogenized dairy products (such as raw milk, raw milk cheese and raw milk yogurt).

Raw foods as a dietary health treatment was first developed in Switzerland by medical doctor Maximilian Bircher-Benner, the inventor of muesli.

Generally it is believed that raw foods have a higher nutritional content than foods that have been cooked. Raw foods provide bacteria and other micro-organisms which support the immune system and aid digestion by populating the digestive tract with beneficial gut flora.

Raw foods such as fruits and vegetables are high in antioxidants and therefore help to prevent cancer, heart disease and diabetes.

The detoxing and weight controlling properties of a raw food diet reportedly help to slow down the ageing process. Understanding the principles of raw food and incorporating them, at least to some extend, into the daily diet routine, will bring immediate health benefits, add life-energy and a provide a feeling of vitality and well-being.
